Recipe for Apple and Cinnamon Oatmeal Pancakes
These delicious pancakes are a great way to get fiber into your children’s diet. They are very popular. Double the batch and enjoy them throughout the week.
Serves 4
Ingredients :
1 ¼ cups buttermilk, divided
2/3 cups quick cooking oatmeal
1 large egg, beaten
2 tablespoons packed brown sugar
1 medium granny smith apples, peeled and grated (squeeze excess juice out)
6 tablespoons all purpose flour
6 tablespoons what flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon cinnamon
2 tablespoons oil, plus additional for the grill
Maple Syrup
Directions:
In a large bowl, whisk together 1 cup of the buttermilk and the oats and let stand for 15 minutes. In another bowl, whisk together the egg, brown sugar and apple. Stir in the flours, baking soda, salt, cinnamon, 2 tablespoons oil, oat mixture and the remaining ¼ cup of buttermilk. Combine well. Heat griddle over medium heat. Brush with oil and drop batter by 1.4 cups. Cook pancakes 1-2 minutes per side. Serve with maple syrup.
