Recipe for Cauliflower and Bacon Salad
I love the crunch and texture in this simple salad. The dressing recipe makes quite a bit, so I suggest cutting it in half unless you want lots of leftovers!
Ingredients:
One bag of romaine salad
1 head of cauliflower, chopped, or cut into small flowerets
8-10 slices of bacon, crisply cooked and crumbled
¾ cup freshly grated parmesan cheese
Dressing:
1 cup Hellman’s Mayonnaise ¼ cup sugar
3 tablespoons vinegar
1 small onion, chopped fine
Directions:
- Mix the dressing ingredients with a whisk and refrigerate for a few hours until chilled. The dressing will seem a bit thick, but thins as the salad is tossed.
- To assemble the salad, mix the greens and desired amount of dressing. Add the cauliflower. Toss again and sprinkle with cheese and bacon.
