Recipe for Chicken Tikka
This is a very mild Indian dish. This recipe is a great way to introduce your kids to ethnic cuisine. Serve with basmati rice.
1 boneless, skinless chicken breasts
2 cloves garlic, halved
1, 2 inch piece of ginger, peeled and chopped
1 cup plain yogurt
3 tablespoons canola oil
1 lime, juiced
1 teaspoon ground cumin
1 teaspoon ground coriander
½ teaspoon ground tumeric
Salt and Pepper
2 tablespoons canola oil
1 teaspoon butter
Cilantro and lime wedges (optional)
Cut chicken into 1 inch pieces.
Place garlic, ginger, yogurt, 3 tablespoons oil, lime juice, cumin, coriander, and turmeric in a blender or food processor and pulse until well blended. Place chicken in marinade and let sit in fridge overnight (or for at least 4 hours).
