Recipe for Chocolate Covered Frozen Banana Pops
These tasty morsels are great in the summer.
Serves 8
Ingredients:
4 bananas
½ cup heavy cream
1 cup semi-sweet chocolate chips
¼ cup toasted coconut
¼ cup chopped peanuts
Bamboo skewers or Popsicle sticks
Directions:
Peel bananas and cut them in half. Inset stick into banana so it looks like a lollipop. Wrap bananas in aluminum foil and freeze over night (or 4-6 hours). Place cream in a small saucepan over medium heat until warm. Remove from heat and add the chocolate chips. Let stand for 2 minutes and then stir until smooth. Unwrap bananas and dip into chocolate until covered. Roll in coconut and chopped nuts. Place bananas on a baking sheet covered with wax paper. Refreeze until ready to serve.
