This chicken dish is very healthy and yummy and easy to prepare.
Serves 4
Ingredients:
3 boneless, skinless chicken breasts, cut in half lengthwise
1 ½ teaspoons sea salt
Juice of 1 lemon
1 cup thinly sliced red onion
1 cup orange juice
3 tablespoons olive oil
2 teaspoons dried oregano
3 large cloves of garlic, thinly sliced
1 tablespoon capers, rinsed
½ cup pitted Kalamata olives, sliced in half, lengthwise
Directions:
Place the chicken in a glass dish and cover with ¼ cup of the lemon juice and 1 teaspoon of the salt. Marinade for 2 hours, then rinse chicken. Pat dry and sprinkle with ¼ teaspoon salt.
Spread the onions in the bottom of a greased, shallow, glass baking dish. Add the orange juice. Place the chicken on top.
Whisk together the remaining lemon juice, the olive oil ad the oregano. Drizzle over the chicken. Sprinkle the garlic, capers and olives over the chicken. Bake for 30 minutes at 375 degrees. Place chicken on a serving platter and serve with the juices, spooning the olives and capers and a few of the onions over the top.
