Recipe for Greek Chicken Pitas
1 package boneless, skinless chicken breasts, cut into 1 inch pieces
4 pieces Greek style whole pita bread
1 cup Wishbone Zesty Italian Dressing
Feta cheese crumbles
Dressing:
1 cup plain yogurt
½-whole cucumber, peeled, seeded and chopped, finely
1 small onion, chopped, finely
1 bunch cilantro, chopped
salt and pepper
2 dashes garlic powder
1 small tomato, seeded and chopped
Place chicken pieces in a bowl. Cover and toss with Italian dressing. Cover and refrigerate overnight, or for several hours. Place chicken on kabob skewers. Grill until desired doneness. Place in warmed pita bread with cucumber dressing.
Place cucumber, onion, cilantro and tomato in a bowl. Sprinkle with salt, pepper and garlic powder. Mix in yogurt. Chill. Serve in pita pockets with feta cheese.
