Recipe for Oatmeal Honey Cookies
The recipe makes just enough cookies so you don’t overindulge.
Yield: 14 cookies
½ cup butter at room temperature
¾ cup packed brown sugar
½ cup white sugar
2 tablespoons honey
1 egg yolk
1 cup whole wheat pastry flour
1 cup rolled oats
½ teaspoon baking soda
¼ teaspoon salt
1/8 teaspoon cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon nutmeg
Preheat oven to 375. Line 2 baking sheets with parchment paper and spray with cooking oil.
Beat butter and sugars together until creamy. Add honey and egg yolk. Stir in the flour, soda, salt and spices. With floured hands, divide dough into 14 balls. Leave 3 inches between cookies to allow for spreading. Bake for 8-10 minutes until just firm. Cool on a rack. Do not over bake or they will become very hard.
