Recipe for Baked Zucchini

This is a great way to get your kids to eat their veggies. These tasty morsels can almost pass as pizza!

Serves 4

Ingredients:

4 medium zucchini

2 tablespoons olive oil

4 ounces thinly sliced mozzarella or provolone cheese

Mild salsa or pizza sauce

Directions:

Preheat the oven to 400 degrees. Slice the zucchini lengthwise into 4 strips each. Brush with olive oil and place in a cookie sheet or in an ovenproof dish. Bake the zucchini for 10 minutes. Remove zucchini from oven and spoon salsa or pizza sauce on top. Cover with sliced cheese and return to oven for 10 additional minutes until the cheese is melted and bubbly.
