Recipe for Banana Bran Muffins
Yield: 1 dozen muffins
Ingredients:
1 cup flour
1 cup wheat bran
1 teaspoon baking soda
½ teaspoon salt
1 cup coarsely chopped walnuts
2 large, ripe bananas, mashed
½ cup butter, softened
½ cup brown sugar
1 egg
Directions:
Preheat oven to 375 degrees. Line muffin pans with papers or grease muffin tins. In a medium bowl mix the flour, bran, soda, salt and nuts. Set aside.
In another bowl, beat together the banana and butter-don’t worry if the batter looks lumpy and curdled-then add the brown sugar and egg and beat until completely mixed. Add the combined dry ingredients and nuts and stir until just blended.
Spoon into the muffin tins, filling each cup about ¾ full. Bake until a toothpick inserted in the middle comes out clean, 15-20 minutes.
Serve with a large glass of cold milk. No need to store leftovers.
