Recipe for Provencal Roasted Chicken Breasts
This wonderful chicken recipe reminds us of the perfectly roasted chicken we’ve had in Provence. The skin is crispy and the meat is moist. You can also use thighs or legs if you like. Children love this, too! The recipe can be easily doubled.
Serves 2-3
Ingredients:
3 split chicken breasts with skin and bone
7 cloves garlic, minced
2 teaspoons fresh rosemary, chopped
1 teaspoon freshly ground pepper
1 teaspoon coarse salt
1-2 tablespoons Herbes de Provence
Directions:
Preheat oven to 475 degrees. In a small bowl, combine 1 tablespoon olive oil, the rosemary, garlic, pepper, salt and Herbes de Provence to make a thick paste. Run fingers under the skin of the chicken breasts to loosen. Rub ¼ of the herb mixture under the skin of each breast. Spread the remaining ¼ of the spread on top of the 3 breasts. Sprinkle with additional salt and pepper.
Place the chicken in an oven proof skillet and roast for 35-40 minutes. You may have to cover the chicken with foil for the last half of the cooking time if it becomes too brown.
