Recipe for Raspberry and Feta Salad with Couscous
1 box plain couscous (prepared with chicken broth in lieu of water)
2 pints fresh raspberries
8 ounces plain feta cheese, crumbled
2 small zucchini, sliced
3 green onions, sliced
½ cup pine nuts, toasted*
4 large basil leaves, thinly sliced into small strips
Zest from one large lemon
1 tablespoon white wine vinegar
1 tablespoon balsamic vinegar
4 tablespoons olive oil
Juice from 1 large lemon
Salt and pepper
Prepare couscous according to directions and fluff with a fork to break any lumps. Cool so that cheese does not melt. Stir in the shredded lemon zest and basil.Add the feta, zucchini, green onions, raspberries and pine nuts.
