Recipe for Tomato Basil Bruschetta
This is a wonderful appetizer for a warm summer evening, featuring garden tomatoes and basil. Serve with thin slices of toasted garlic bread.
Yield: 6-8 servings
Ingredients:
4 Roma tomatoes, chopped
8-10 fresh basil leaves, chopped
1 ball fresh mozzarella, cute into small cubes
1 clove garlic, crushed
salt
pepper
olive oil
Combine the first four ingredients in a glass bowl. Sprinkle with salt and pepper to taste. Add just enough olive oil to dress lightly. Toss. Serve cold or at room temperature on toasted garlic bread.
Toasted Garlic Bread:
Thinly slice a baguette. Spread each slice generously with butter and place on a cookie sheet. Sprinkle each slice with garlic powder, salt and dried parsley. Broil until slightly golden.
