Recipe for Winter Minestrone
This wonderful soup is healthy and delicious. Kids love to help chop up all the veggies in this comforting soup.
2 tablespoons olive oil
1 small onion, chopped
2 carrots, peeled and chopped
2 celery stalks, chopped
3 ounces bacon, fat trimmed and chopped
2 cloves garlic, minced
1 bunch Swiss chard, (greens only) coarsely chopped
1 Russet potato peeled and cubed into small cubes
1 14 ½ ounce can of petite diced tomatoes and juice
1 teaspoon dried rosemary, crushed
1, 15 ounce can Cannellini beans, drained and rinsed
1 ½ cans of water (use bean can) set aside ¼ cup of water
2 beef bouillon cubes
1, 1-ounce piece of rind from a good parmesan cheese (trust me)
2 tablespoons flat-leaf parsley, chopped
Salt and Pepper
Heat the oil in a large pot and sauté onions, carrots and celery, bacon and garlic for about 10 minutes over medium heat. Add the chard and the potato and sauté for 2 more minutes. Add the tomatoes and their juice and the rosemary and simmer for 10 minutes.
